Guest Chefs – Holland America’s ms Maasdam

Holland America Guest Chef Videos

The Culinary Arts Center on Holland America’s ships are outfitted with video recording equipment, including overhead cameras which allow guests to see the chefs work from above. Holland America was kind enough to furnish two videos from the O’Heas’ at-large demonstrations. We would like to thank the ms Maasdam’s Party Planner, Kaitlyn, Chef de Cuisines/Show Chef Fred and the gentlemen who operate the cameras, sound equipment and produced the videos.

“Chicken of the Sea”

The video below was filmed during the O’Heas first Culinary Arts Center demonstration aboard the ms Maasdam in late March 2012.  They prepared “Chicken of the Sea,” a play on sea scallops made using ground chicken.

Alsatian Tart

For their second demonstration, Chefs Shanna & Brian O’Hea created Alsatian Tarts, a delicious appetizer that was much enjoyed by all in attendance. This video was filmed during the first week in April.

About The Kennebunk Inn

The Chefs/Owners of The Kennebunk Inn and its restaurant, Academe Maine Brasserie & Tavern met when they were students at The Culinary Institute of America.
